Hot Honey Wings

Ingredients
- 2 lbs chicken wings, split at joints
- 1 tbsp baking powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper
- ⅓ cup hot sauce (Frank's or similar)
- ¼ cup honey
- 2 tbsp butter
- 1 tsp red chili flakes
- 1 tsp apple cider vinegar
Instructions
Pat wings completely dry with paper towels — this is non-negotiable for crispy skin. Toss in baking powder, garlic powder, paprika, salt, and pepper. Spread on a wire rack over a baking sheet.
Bake at 250°F (120°C) for 30 minutes to render the fat, then crank the heat to 425°F (220°C) and bake for another 40-45 minutes, flipping halfway, until deeply golden and shatteringly crispy.
While wings bake, melt butter in a small saucepan over low heat. Whisk in hot sauce, honey, red chili flakes, and apple cider vinegar. Simmer for 2 minutes until slightly thickened.
Toss the hot crispy wings in the sauce immediately, coating every inch. Serve with blue cheese dip and celery sticks.
