Citrus Peels: Candied, Cleaners, and Cocktails

The orange and lemon peels you throw away every morning contain more aromatic essential oil, flavor compounds, and household cleaning power than the fruit itself. The peel of a citrus fruit is the most wasted food item in the average kitchen. Here are three completely different ways to extract full value from every rind.
1. DIY Natural Citrus Cleaner
Save your peels in a clean glass jar. Pack them in tightly, then completely cover them with white distilled vinegar. Seal the jar and leave it in a cool, dark cabinet for two weeks minimum.
The vinegar slowly extracts the d-limonene oil from the peel. D-limonene is a clinically proven natural degreaser and antimicrobial compound that commercial cleaning products pay premium prices to synthesize artificially.
After two weeks, strain out the peels and pour the citrus vinegar into a spray bottle. Dilute it one-to-one with water. You just made a completely effective, pleasantly fragrant kitchen surface spray for zero additional cost.

After the third blanch, simmer the peel strips in a simple syrup (equal parts sugar and water) for 45 minutes until they turn translucent and glossy. Drain and roll them in granulated sugar while still warm.
These candied peels keep for weeks in an airtight container. They work equally well as a standalone candy, a cocktail garnish, or chopped into biscotti and chocolate bark as a premium flavor addition.
3. Cocktail and Mocktail Twists
Zest is the thin, outermost layer of the peel with no white pith. Press a thin strip of lemon or orange zest over the surface of any drink and then drop it in.
