3. Congee (Rice Porridge)

Dump your leftover rice into a pot with four times its volume in water or chicken stock. Boil aggressively, then reduce to a simmer for 20 minutes, stirring occasionally. The rice disintegrates into a thick, creamy porridge that feels like an expensive restaurant dish but costs almost nothing.
